I didn’t think I spent THAT much energy thinking about and acquiring clothes. But, for whatever reason, in the days since the diet started, I’ve had considerably more free time, a good portion of which has been spent in the kitchen.
I realize this is perilous, given that I can’t buy more forgiving duds if I eat everything I cook (a distinct possibility). But, the kidlets desperately need something healthy to supplement their diet of Annie’s Mac n Cheese. And I am a sucker for cooking magazines.
Which leads me to the cake. The other night, I made “Nectarine Golden Cake” from Gourmet’s September Issue. The issue has an alphabetical theme, and this was “N” (which explains why it isn’t “Golden Nectarine Cake”). But I digress…
While this cake did nothing to improve the kids’ nutritional situation, it was lovely: fast, easy, elegant, not too sweet, and tasted of summer. Eric – who often passes on dessert, in favor of something salted and/or fried – gave it a thumbs up. He also thought it would work for breakfast or brunch. I tested his theory the next day, and he was right. It was even better with a mug of coffee.
